I’m a chicken fan.
Give me chicken stir fried, grilled, baked, shallow fried, deep fried and I’ll chow down gladly.
But these lemon pepper chicken wings guys… these crispy, tender, flavour-full wings – they’re in a class of their own.
Andre (hubby) is the genius behind these wings and makes them for almost every occasion where we have guests. Why? Because they’re a guaranteed hit!
I can spend hours preparing salads and making desserts, yet the main dish our guests will always comment on is Andre’s famous lemon pepper wings!
These wings, or niblets I should say, are coated in garlic salt and lemon pepper seasoning before being deep fried. They don’t have a coating of flour like traditional fried chicken, which makes them so crispy and light. And so simple to cook!
I assure you, they’re finger-licking good. Give them a try next time you have wing cravings to satisfy and you won’t be disappointed!
Start with pouring vegetable or canola oil into a deep frying pan until it’s a few inches deep. (It will bubble up, so make sure the pan is tall enough.)
While the oil is heating up, place the chicken niblets into a bowl and season generously with garlic salt and lemon pepper seasoning.
Rotate the chicken with your hands after seasoning, to make sure every piece is evenly coated.
To test the oil to see if it’s hot enough for frying, drop a crumb into the oil. If it bubbles around the crumb, it’s ready.
Carefully drop all the chicken pieces into the hot oil and keep an eye on it every few minutes to see how it’s browning.
When the chicken is a golden brown colour, start taking individual pieces out of the oil and putting on paper towel to drain.
Add extra lemon pepper seasoning and toss to coat evenly.
Serve with ranch or blue cheese dipping sauce if desired and ENJOY!

Let me know if you make a batch of these, they’re seriously a fave in this household.
