Currently in our household, 3 out of 4 of us are sick with a cold virus of some sort.
The sort that brings congestion, sinus headaches, sore throats, coughing and an upset stomach. Ugh.
It’s been hanging around for a week now, slowly taking out each member of our family and turning us into snotty, feverish, miserable whiners.
So in an effort to restore some health and make my family feel less like death, I decided to pick myself up off the floor and make some Special Ingredient Chicken Noodle Soup. It was time to balance out all the cake we’ve been eating anyway. (Remember this, this, and this? It’s an addiction!)
So what makes the Special Ingredients in this soup so special?

Special Ingredient Chicken Noodle Soup
In addition to the Special Ingredients in this deliciously tasty soup, there are your standard Chicken Noodle Soup ingredients which work so nice together to make this a well rounded and wholesome meal for you and your family. (Serves 6)
2-3 tablespoons of olive oil
1 brown or red onion, finely chopped
4 cloves of garlic, finely chopped
3 stalks of celery, finely chopped
2 medium carrots, finely chopped
1 medium potato, peeled and finely chopped
1 can of corn kernels, drained
80g Spagettini (thin spaghetti) broken into 5 cm pieces
8 cups or 2 litres of chicken stock
1 BBQ Chicken, shredded without skin
+ Special Ingredients:
1.5 teaspoons of Turmeric
Fresh Thyme to sprinkle on top
Lemon Wedges to serve
Heat the oil in a large deep pot or dutch oven.
Add garlic and onion and cook until translucent.
Add chopped carrot, celery and potato and stir on and off for about 5 minutes.
Add chicken stock and turmeric, cover and bring to a boil. Reduce heat and simmer for 15 minutes.
Break the pasta into 5cm pieces and drop into stock. Add chicken and corn kernels and cook for 10 minutes or until pasta is cooked.
Season with salt and pepper and stir through fresh thyme.
Serve with lemon wedges and squeeze on top just before eating.
